Easy Roasted Chicken

This is so easy and delicious. I am trying to clean out my pantry a bit this week, and I have some leftover Arborio rice from making Rice Pudding. So, I decided to make a simple Risotto to go with Roasted Chicken tonight. If using white wine, reduce water/broth by 1/2 cup. Risotto is easy to make but does require patience and time to stir. I make mine with chicken broth, I save the wine and cream version for company. I made this on Wednesday, and it was delicious. It's going into my favorite winter soup recipes stash. Not my recipe, so I won't post it, instead I'll direct you to Prairie Bounty Catering for the recipe. Instead I'll just post some pictures of this yummy soup. I had this with a slice of Oatmeal Bread to dip in, and it was absolutely heavenly. Spicy, but not overly so. I use a larger rectangular baking stone so I can bake 2 of the smaller rounds at a time. If you use a stone it will take less time as the stone gets hotter, so start checking it after the first 4 or 5 minutes. These can really puff up, if you don't want them to puff too much, watch them and push them down a bit with an oven mitt after 1-2 minutes, while they are still soft. I spent this afternoon making 2 soups, similar bases, a few different additions, 2 totally different soups. Soup is one of my favorite comfort foods, it always reminds me of being taken care of, especially when I was sick. Only now I'm the one doing the nurturing, and it's myself I'm nurturing. Chicken Tortilla Soup:The two big batches of soup will supplement my dinners for the next couple of weeks so I have less cooking to do and can spend more time on the Spring Cleaning. One is a brothy Chicken Tortilla Soup, the other is a creamy Chicken and Wild Rice Soup. Both of these soups start with 2 lbs sauteed chicken, 1 cup sauteed onions and celery, and a lot (approx 64 oz) of chicken stock.To the Chicken Tortilla Soup I add 1 can tomato sauce, 2 cans diced tomatoes, 2 cans diced green chiles, 1 can black beans, and a few liberal shakes of a Southwest seasoning blend. I took a whole mess of pictures, but by the time I got everything on my computer and realized they were all too steamy and blurry to use, the soup was gone. So I hope you enjoy the picture of the stock! Disclaimer: the stock started out too bland, so I started dumping in Southwest seasoning. Unfortunately I didn't measure, so it's to taste. You do sample while cooking, don't you?All measurements are approximate, it's soup, add what you like and as much as you like. I use the meat left after serving a whole chicken, but you can use whatever you like. This makes a very large pot of soup. I finally added pictures to all the Thanksgiving posts, I know, I'm sorry it took so long! I just realized that my ham looks like a big ball, that's the way our local butcher formed it. It is super yum, though!I already posted the promised Oatmeal Bread Recipe and I posted a general guide to the Chicken Tortilla Soup. And I'll be posting the promised Pönnukökur and Snúðar Recipes between now and Sunday. Turkey with Sage Orange Butter

Brining the TurkeyStart the night before you plan on cooking the turkey, this is a 10-12 hour process.This is the turkey before being basted one last time to remove the sage and lifted out. It fell apart as it was lifted out of the roaster, so this was the best picture I had. It is seriously the best turkey I've ever tasted. Adapted from Better Homes and Garden Best Loved Community Recipes Vol I (still available used). I usually use some of the leftovers from Brandied Candied Sweet Potatoes to make this and adjust amounts accordingly. So I'll give the recipe as in the cookbook, and then also my ingredient modifications when making with leftovers from Thanksgiving. Sage Orange GravyINGREDIENTS:Juice from turkey roasting pan (discard giblets, etc.)1 cup dry sherry (or cider, if you prefer)1/2 cup flour2 cups chicken or turkey broth1/4 cup heavy creamOptional: Herbs, bacon fat or whatever seasonings you preferDIRECTIONS: Separate fat and broth in the pan drippings. (Pour pan drippings juice into a glass. Fat will rise to top)Pour 1/4 cup of fat into a saucepan. Pour pan juices back into roasting pan (not the remaining fat). Over low heat, scrape bottom of pan with a wooden spoon to incorporate all the fond (bits and pieces of meat and crunchy stuff) into gravy. Add dry sherry or cider to roasting pan and stir. Vanilla Pears and Caramel Sauce

As I mentioned, I used the pears from my Thanksgiving Centerpiece to make Vanilla Pears inspired by this post by Angelina of Dustpan Alley. While I will make these again sticking a little bit closer to what she specifies, this was just a quickie to serve with ice cream that evening. When I was cleaning up the kitchen and the front of the refrigerator this weekend I was inspired to make a Raspberry/Blackberry Buckle as a treat for Paul. I had some berries in the refrigerator that needed to get used up. While cleaning the front of my refrigerator I glanced at Amy Carol's Cheat Sheet of Basic Recipes with a Raspberry Buckle recipe on it. I was going to use the berries for breakfast tomorrow, but decided to go with the buckle instead.This was very good, mine looks a bit of a mess, I added about 1/2 cup white chocolate chips and mixed Raspberries and Blackberries since I didn't have enough Raspberries. I served it with a few carmelized bananas (that needed to be eaten) and vanilla ice cream. Cookie Swap Part III: Peppermint Cookies

I make these cookies every year at Christmas, and short of gingerbread they have become the quintessential Christmas cookie in my mind. The dough is meant for shaped cookies, and is firm without being too crunchy or too dry. The peppermint pieces inside melt and become slightly chewy bits in the cookies. These are the perfect compliment to a cup of hot cocoa in front of the fireplace.These have frosting drizzled on top of them, so to transport these I used 4 clear plastic plates per dozen layering a plate face up, 7 cookies, plate face down, plate face up, 5 cookies, plate face down. Then I went around the plates with saran wrap to keep them from shifting. Lemon Cups

I took a break from cleaning last night to make these lovely lemon cups... I was craving something lemony, but I wanted something light, as opposed to rich and dense like lemon bars.These bake up to a very light spongy cake layer on top and a layer of lemon curd on the bottom. They are also delicious made with lime juice instead of lemon juice. A wonderful light summer dessert when served chilled, but who has the patience to let them chill? They are also great served warm with a bit of vanilla ice cream.You will want 3 bowls, measuring cups, a whisk (or fork), a rubber spatula, and a mixer handy (unless you have great upper arm muscles and routinely whisk egg whites to stiff peaks by hand).I've tried to take a couple of pictures to share the light custardy goodness, but really no picture can do them justice.Can you see the layers in the picture below? We used to make these all the time when I was younger. While they aren't quite as good as I remember, it would make a nice layer for an ice cream dessert.Orange BallsINGREDIENTS:1 box Nilla Wafers, crushed1 bag shaved coconut1 can frozen orange juice concentrate2 cups powdered sugarpowdered sugar for rollingDIRECTIONSMix the Nilla Wafers, coconut, orange juice and sugar together. Roll into 1" balls (this is sticky and messy!) and roll in powdered sugar. Enjoy.To make it easy, I just throw the box of Nilla Wafers in a food processor and pulse into crumbs, then add powdered sugar and pulse a few, then add the rest and pulse until mixed.I envision this working better as part of an ice cream dessert. I've made some very lovely dishes, and eaten quite tasty things. Which I will post, but not until the middle of February.I have a Chicken Tortilla Soup that is... brothy, not creamy, just the right amount of spicy, and simply delicious. A Chicken Noodle Soup that wasn't turning out very well, and in the end turned out perfectly but being the dump cook that I am, I stopped paying attention to what was going into it. Have you thought about your centerpiece yet? If you choose a centerpiece that requires fresh flowers, make arrangements with a local florist to pick them up the Wednesday before Thanksgiving. You don't want to count on them having any left on the spur of the moment. In my case, I don't plan on spend much time the night before Thanksgiving working on a centerpiece. So I'm choosing something I can assemble several days in advance.I've decided on something similar to the last picture in this post of Thanksgiving centerpiece ideas.So, I've added apples, pears, cranberries, small decorative pumpkins and gourds, pomegranates, mixed nuts in shell, and pillar candles in a soft orangish-brown to my grocery list.Here's the picture again as a reminder. Just to give you something to look forward to, I bought a handful of pears for my Thanksgiving Centerpiece. As I mentioned earlier I'm going to do more of a fruits, pumpkins and nuts centerpiece. And I bought a few each of three different pear varieties.After Thanksgiving I am going to make Vanilla Pears based on a recipe from Angelina of Dustpan Alley. I can't wait to taste how they turn out.I'm hoping to have some time for this on Saturday or Sunday.I also have 5 pomegranates to do something with after Thanksgiving, so I'll be looking for a recipe to play with for those as well. NaBloPoMo is over for me, unintentionally...

I ended up quitting NaBloPoMo this weekend, albeit unintentionally. Knowing I had a ton to do this weekend, I wrote up my posts in my e-mail client to be sent at specified times this weekend. Well, then in the rush to get ready for my cocktail party this past weekend, I closed my email client so it wouldn't pop up with mail notifications while people were around. So, when I checked my blog this morning after getting to work... No posts... ah well... C'est la vie. At least now I won't stress over posting this Thanksgiving week. When I get home this evening I will get the ones that were missed this weekend posted. Hopefully, Blogger will eventually allow you to set a future time in the Post Options and posts won't show on the blog until that time. My first party for November was on 11/6, and since it was on a Tuesday evening, I was literally running down to the minute, and had no time for photographs. This Saturday is my second for November, and should afford me plenty of time to photograph and detail out what I put in items and how to prepare it.If you've read the blog description, the dump cook is quite literal. Most of these things I've made a hundred times or more, but I don't have a list of what I put in. So as I'm making these favorites, I have to take some time to make notes about quantity. Where in the past I would quite literally just squeeze, pour, scoop etc, directly into the bowl, I am actually taking time to use measuring utensils so I can give you an idea of what really goes into these recipes.My hubby asked what I'll do if I try something and it doesn't turn out, it's simple, I won't post it. Thanksgiving Planning: My Cooking Timeline

I thought I'd share my cooking timeline with you, this is the only way to get everything done on time. Thanksgiving has crept up quickly and my cooking starts this weekend. If you don't recall, I posted my menu on October 31 and my general timeline to get through November on November 1. I ordered my ham today from our local butcher and that will be ready for me to pick up on Wednesday after work. I have dinner at 2pm, it's the only way to get everything done on-time and not go insane. My turkey will take a minimum of 4 hours and a max of 5.5 and needs to rest for at least 20 minutes after it's done, so I assume 5 hours, with 30 minutes in the oven to crisp the skin. Cider Acorn Squash

Maybe I've totally lost it, but there seems to be a little bit of a peanut butter smell when you cut into an acorn squash. Anyway, because I smelled peanut butter I went with sweet for this acorn squash instead of savory. I had one of my nights where I just had to throw together what I had. So, we had some leftover Baked Macaroni and Cheese and some Cider Acorn Squash. This is almost dessert. Cider Acorn SquashINGREDIENTS1 large acorn squash1/2-3/4 cup apple cider1/4 tsp salt1/2 tsp cinnamon1/2 tsp nutmeg1 Tbsp brown sugar1 Tbsp butterDIRECTIONSCook acorn squash until soft, you can do this many ways depending on time(*preferred): - Cut in 1/2 and cook covered in a saucepan with boiling water and 1/4 cup apple cider for 10 minutes - *Cut in half and place on baking sheet cut side up, fill each 1/2 with Tbsp apple cider in a 350F oven for 35-40 minutes - Cut in half, fill each 1/2 with Tbsp apple cider and microwave for 5-10 minutes at 50% power (check often every microwave is differ ...
