  • Thai Red Bean Dessert
    Thai Red Bean Dessert : Red Beans are the healthiest dried beans available, rich in antioxidants and loaded with fiber. They also have a naturally sweet flavor which makes them excellent for desserts. Enjoy them in this one of many Thai coconut-based dessert recipes. An easy dessert to make in your slow cooker, either overnight or during the day.  INGREDIENTS: Serves 4-6½ cup red adzuki beans 1 ½ cups water2 cans coconut milk½ cup Asian-style "pearl" tapioca (very inexpensive at Asian food stores), or regular minute tapioca 2 tsp. vanilla flavoring ½ cup sugar (or more depending on desired sweetness)pinch of saltoptional: a handful of dried seaweed to eliminate "gas" from the beans (available at Asian grocers) optional: 2 Tbsp. dry shredded baking-type coconut, as is, or toastedoptional: a few red jelly beans to sprinkle on top PREPARATION: Place beans, water, salt, and seaweed (if using) in a slow cooker on “high”.     At home we like to light lots of fireworks at the start of the new year to chase away the demons and evil for the year to come. Well, that’s where the tradition comes from, actually we do it because it’s colorful, noisy and fun. Well, in Japan they have a similar ritual on February 3rd, the day before the Lunar New Year: Setsubun. The Japanese like to throw soybeans out of their doors or even at each other, especially people wearing Oni (demon) masks. The mamemaki (bean scattering) is to drive away evil spirits from your house, and eating your age in soybeans is the way to get luck in instead. I didn’t really want to throw soy beans out of my apartment front door, basically because I didn’t really feel like cleaning up heaps of beans scattered about. Instead of doing the throwing, I decided to get thrown at.     2 tablespoon Sesame seeds1 pound Fresh bean sprouts thoroughly washed and drained3 Garlic cloves, peeled and minced2 md Scallions ?? trimmed & minced1 ? 1" cube ginger, peeled and minced2 tablespoon Oriental sesame oil1/3 cup Soy sauce2 tablespoon Cider vinegar1 tablespoon Mirin (sweet rice wine)2 teaspoon Light brown sugar1 teaspoon Spicy sesame oilPREHEAT OVEN TO 300F. Toast the sesame seeds by spreading them over the bottom of a pie tin. Roast for 12?to?16 minutes, stirring often, until they are golden. The seeds can be toasted in advance and stored in an airtight container.Place the bean sprouts in a large heatproof bowl and set it aside. In a medium?size skillet set over moderately low heat, stir?fry the garlic, scallions and ginger in the oil for 2 to 3 minutes, until they are limp. Locals call it “The Bean”. It’s amazing! When we were in Chicago I spent more time walking around the bean, and under it, than I did any other sight that I went to in all of Chicago. Isn’t that amazing? Here’s a close up view. The large structure that you can see reflected in the background is Millennium Park. I posted a photo of the outdoor theater on my gardening website. You should visit to take a better look at it because it’s an amazing design too. Cool. I just loved Chicago. I was only there for three days, but I found that it was very much like Toronto. I felt very much at home there. Maybe Chris and I will end up going to Chicago again this summer. BTW when these photo was posted on another site someone wondered if it was photoshopped.  Nope.

We spotted this one over on Weight Loss Success Stories.  Garbanzo beans are one of the healthiest foods you can eat. 15 Minute Greek Garbanzo Bean Salad (from WH Foods one of my favorite sources for great recipes.) Makes 4 servings - 129 calories each. Ingredients: 1 15 oz can garbanzo beans, drained and rinsed 2/3 cup minced scallion 3 medium cloves garlic, pressed 1 medium ripe tomato, seeds removed and chopped 3 medium ribs celery diced about 1/2 inch pieces 3 TBS fresh lemon juice 2½ TBS chopped fresh mint 3 TBS chopped fresh parsley extra virgin olive oil to taste *(optional) ¼ cup feta cheese 1 small head chopped romaine lettuce, outer leaves removed, and discarded salt & cracked black pepper to taste Directions: Mix all ingredients except lettuce and cheese in a bowl and season with salt & pepper to taste.
