Pork Loin with Apple and Cranberry stuffing Ingredients: 1 boneless pork loin (about 6 pounds)Sea salt and freshly ground pepper2 cup seasoned croutons1 cup chicken stock1 1/2 cup peeled, chopped green apples1/3 cup dried cranberries 3 Tbs cup chopped walnuts, toasted1/4 cup finely chopped sweet onions2 Tbsp Cranberry juice2 Tbsp Honey1 Preheat oven to 325°F.2 Rinse the pork and pat it dry. When we came home we found the house decorated for Christmas and loads of presents near the Christmas tree. Normally we put them under the tree, but the amount of presents would make it too hard to clean the living room floor. Annual Day at Nana Faye'sOn Saturday, December 29th, everybody went to my Great Nana Faye's house to celebrate Christmas together. The highlight for me was seeing Nana Faye and all of my aunts, uncles, and little cousins..old and new, from near and far. Sorry for the light posting. We've been spending some great time with our families during the Christmas season (some vacation was in order!). However, we do have a great new Catholic Carnival here. It's the Christmas version, which makes it pretty special in itself.

You might have noticed that recently, I have been writing about casinos and how I am enticed by trying them out. It started from posts from other bloggers tackling about casino games both online and offline. I dont know the exact reason but I find myself hooked with this games. As a matter of fact, just this morning, I think I found the top rated online casino on the internet. Why? I got a break from work since I filed a leave for quite some time and no body bosses me around. Why? Because im self-employed and very happy with it. Anyways, I always wanted to go to las Vegas for christmas but I wasnt able to go due to some personal reasons. My golf presents this year consisted mainly of golf balls, tees, a glove and other essential gear that I really needed. As i finished wrapping the last of the gifts on Christmas eve, and went to throw out a couple empty cardboard wrapping paper tubes, my wonderful hubby stopped me and exclaimed "you can't throw those out...they're the best thing about Christmas!".Sure enough, after folding some laundry I returned to the kitchen to find my husband and the wee one engaged in a duel of Christmas paper swords.The wee one fought valiantlybut was eventually de-swordedand hubby reigned victorious.Of all the wonderful gifts i received this Christmas, having hubby home for 5 straight days was by far the best. Sorry I haven't wished everyone a Merry Christmas but I have been very busy.
