Contrary to conventional culinary wisdom, a new study by Italian researchers has found that cooking vegetables can preserve or even boost their nutrient content. Traditional culinary view maintains that eating raw vegetables is more nutritious than eating cooked ones, but a small and growing number of studies suggest that cooking may actually increase the release of some nutrients, according to study leader Nicoletta Pellegrini, of the University of Parma in Italy. However, she added that scientists are seeking more complete data on the nutritional properties of cooked vegetables. For the study, Pellegrini and colleagues evaluated the effects of three commonly-used Italian cooking practices — boiling, steaming, and frying, on the nutritional content of carrots, zucchini and broccoli. Ive realised that I have not been updating this site with new recipes. I ve been slacking and I think it started since I started working again. Believe me I still am the sole chef in this house but just not enough time. However, I have been trying out many various new recipes that I've pinched from the CARI resipi website. My favourite recipe is the Chicken Stew, a very simple and easy to make dish. I thought I'd share my cooking timeline with you, this is the only way to get everything done on time. Thanksgiving has crept up quickly and my cooking starts this weekend. If you don't recall, I posted my menu on October 31 and my general timeline to get through November on November 1. I ordered my ham today from our local butcher and that will be ready for me to pick up on Wednesday after work. I have dinner at 2pm, it's the only way to get everything done on-time and not go insane. My turkey will take a minimum of 4 hours and a max of 5.5 and needs to rest for at least 20 minutes after it's done, so I assume 5 hours, with 30 minutes in the oven to crisp the skin.
