    Mushroom on Crostini with RicottaContinuing in my series of xmas party foods, I present another simple, delicate creation. Mushrooms on crostini with ricotta. Crostini are basically pieces of sliced bread that have been toasted. You can use a baguette to do this and each piece is perfect for your guests to pick up with their fingers. You can also get creative with the toppings. Just be mindful about flavours and not sticking too many items on the toasts. I use sourdough for my crostini because I love the flavour of that bread. For the mushrooms I make a basil paste in the food processor by whizzing up a bunch of basil leaves with some olive oil and a little garlic. The mushrooms I use are a combination of swiss brown,button and shitake. I fry them in a mixture of olive oil and butter and add the basil paste at the end. The mushrooms take on a different character once they have been married with the basil paste. They get all glossy, shiny and sexy! And you should smell them!

  • Mixed Mushroom & Goat Cheese Phyllo Triangles
    MIXED MUSHROOM & GOAT CHEESE Ingredients8 oz mushrooms (I used an equal mix of Shiitake, Cremini, and Chanterelle)2 tbsp unsalted butter1 small onion, finely chopped2 cloves garlic, minced1 tbsp finely chopped fresh sage2 tbsp finely chopped fresh rosemary2 tbsp finely chopped chives1 tsp finely ground long pepper¼ tsp fleur de sel6 oz goat cheeseMethod1. Cut the mushroom caps in half and then into ¼ inch slices (throw the stems in the green bin). 2. Heat the butter in a skillet over medium heat. Just as it begins to brown add the onions and garlic. When they get soft (around 4 minutes) add the fresh sage, rosemary, and long pepper. Stir and give these aromatics time to meet and mingle, just a couple of minutes. Stir in the mushrooms and let them get all wilted (5-6 minutes), they’ll reduce in size and but get concentrated in flavour, especially with those herbs.3. Crumble the goat cheese in a medium bowl and pour the mushroom mix on top. Stir together so that the cheese melts.

    As promised, here is the recipe for the mushroom pasta I made yesterday for lunch using the fabulous hunk of cheese I bought at the markets . On a lazy Saturday afternoon, the last thing you want to do is linger too long in the kitchen. Now, this pasta is so simple and so easily modified that I don't even know if I should provide you a recipe. You could almost make it up as you go, I did. But here it goes. I used the regular swiss brown mushrooms you can find at any supermarket for this dish as that is what I had in the fridge, but really you can use any mushroom you want. If I were to make this again, I am imagining some porcini, chanterelles, oysters, or if you happen to be very lucky or loaded, you can lace the pasta with shavings of fresh truffle. Divine.You can't tell from the picture above but the sauce becomes a beautiful seafoam green and is quite runny in consistency.     A simple, straight-forward recipe.INGREDIENTS:Serves 4* 1 large yellow onion* 200 g fresh mushrooms* 300 g ground meat* 1 tablespoon butter* 3 cloves garlic, pressed* 2 teaspoons chinese soy* 3 - 4 dl (300 - 400 ml) cream* cayenne pepper* saltMETHOD:1. Chop the onion and slice the mushrooms thinly.2. Melt butter in a large skillet, fry and crumble the ground meat.3. Add onion and mushroom.4.     Swedish meatballs are one of the best-known Swedish cooking specialties. However, there are so many recipes. Almost all meatball recipes call for some type of extender such as mashed potatoes, rolled oats or breadcrumbs. Less expensive items than meat. My mother ground very well trimmed meat (ab. 300-400 g) in a hand turned meat grinder. She even used to make her own breadcrumbs. She took 4 crisprolls and crushed them with a bottle between two layers of paper. Then the crumbs were soaked in 1 coffeecup of milk for a while to make a crumb paste. Salt, pepper, grated onion and 1 egg yolk were the other ingredients.My meatballs are a lot easier to make. [The recipe can also be used for patties].
