My friend Angie has been raving about Emeril's Banana Cream Pie for a while. She had it in Florida years ago and has been hoping to have it again one day. For her birthday, I invited her over for dinner and surprised her with Emeril's Banana Cream Pie. She said, it tasted just like she remembers.All of us agree that it is a phenomenally delicious pie but there were a couple of issue with the recipe that I'd like to point out (notes are in red).Here's the recipe, from WCHSTV:Ingredients 5 large egg yolks 1/4 cup cornstarch 3 to 3 1/2 cups heavy cream 1 1/2 cups sugar 1 vanilla bean, split and scraped 3 cups graham cracker crumbs (This makes a pretty thick crust. I would cut out 1/2 cup.) 1/2 ripe banana, mashed 1/4 pound (1 stick) unsalted butter, melted 3 pounds of bananas, cut crosswise into 1/2-inch slices (Definitely can't fit this much banana on the pie) 3/4 cup caramel sauce 1 cup Chocolate sauce 2 cups heavy cream whipped to stiff peaks with 1/2 teaspoon pure vani
4 Eggs, slightly beaten1 cup dark corn syruppinch of salt1/3 cup sugar1 Tablespoon lemon juice or vinegar4 Tablespoons melted butter2 teaspoons vanilla2/3 cup pecan halves1 9-inch unbaked pie shellPreheat oven to 325-350ºF. But the New Year's Eve is is still a couple days ahead, so there's one more reason to make some desserts! I've had enough of my holiday baking, so when I was looking out for something simple to transform into a sweet delight, I came across mini pie crusts is Safeway. These things were so cute, I simply had to pick them up. And though I initially intended to make fruit tarts, once I got home and saw a bag of pistachios gawking out of my kitchen cabinets, my plans had changed. I'm making an Apple Cranberry Pie to bring to Lon's aunt Ilene's house for Thanksgiving. I've made this pie several times and always use different apples depending on what's available in the farmer's market. I love baking with Mutsu apples and Granny Smith's but I didn't see good ones available so I used Cameo's and Jonagold's. It's a perfect Thanksgiving pie to share because it makes a nice presentation and tastes great.Of course you also need a good pie crust. The recipe I used for a double crust calls for 2/3 cup shortening. I used 1/3 cup butter and 1/3 cup vegetable shortening in attempt to get the best of both worlds. Vegetable shortening (like Crisco) has a a higher melting point than butter and is easier to work with but, has no taste. Using some butter, gives the pie crust that buttery flavor we love.

Spanakopita...A Greek classicI haven't really ventured into much Greek food cooking on this blog. I constantly get asked about the title of my blog/website and how this relates to me. I recently renewed my commitment to the "gym."We have a terrific "Rec Center" in our city (actually, multiple Rec Centers), complete with all the latest exercise equipment, basketball courts, pool, etc...For less than $70/year, you can exercise to your heart's content.
